Finish
I’m not really a “word of the year” person (how am I supposed to pre-pick a word to focus on for the year when I have no idea what the year will hold?), but sometimes a theme becomes apparent as the year goes on.
This year, that theme is finish.
Finish the first book before I start the next.
Finish putting away the groceries before moving on to the next task.
Finish the small group Bible study sessions instead of dropping out because it’s hard.
When I can’t finish something perfectly, or when it gets hard or messy, or if it starts to feel overwhelming, my instinct is to ditch the hard thing as quickly as possible, run away as far as I can from it, and start something new.
There’s a time and a place to call it quits or take a break, sure, but there’s also a time and place to dig in, press on, and finish.

→ DIY London Fog Lattes - steep Earl Grey tea in boiling water with a splash of real vanilla extract and 1/2-1 teaspoon of honey. Heat 1/4-1/3 cup milk and whip with a frother. Take the tea bag out, add the milk/foam, and become as addicted as I am.
I’m cooking…
→ Crockpot Carnitas
Serves 6
Put in the bottom of a crock pot:
1 onion, chopped
3 jalapeños, sliced
4 cloves garlic, chopped
On top, place:
1 pork butt, 3-5lbs, cut into fist-sized chunks
Top with:
Juice of 2 oranges
Juice of 2 limes
a generous sprinkle of salt
1T oregano
1T cumin
Cook until the meat is easy to shred (usually 8-10 hours on low, 4-6 hours on high). Shred. Right before serving, put a serving of shredded meat in a skillet with a drizzle of the juice and cook on high for a few minutes, until crispy bits begin to form. Serve with your favorite taco toppings and tortillas, or serve with rice to make bowls.
